Super Safi’s Monday Morning Musings 19 – Steak recipe

Over the past 600+ episodes, The Simpsons has taken us on an amazing journey involving music, science, and food to name a few concepts.

And what better way to start your week, then by discussing some of these concepts Monday morning?

So let’s get started this week by discussing another recipe from the nineteenth episode of The Simpsons, steak.

 

In the nineteenth episode of The Simpsons, Dead Putting Society (Season 02, Episode 06), when Homer and Bart bump into Ned and Todd Flanders at the Miniature Golf course, Homer is convinced that his son could beat Todd in the upcoming miniature golf tournament. They both enter, and they place a bet on who will win – the father of the boy who doesn’t win having to mow the lawn in his wife’s Sunday dress.

Lisa helps Bart by taking him to the library, applying basic geometry principles, and meditating. When the day of the tournament arrives, Lisa wants Bart to eat oatmeal. However, Homer has Marge prepare steak for Bart.

But have you ever wondered how do you make steak?

So here from the Food Network Canada is a recipe for “Peppercorn-Crusted Steak”:

 

Ingredients:

  • 2 Tbsp black peppercorns
  •  2 cloves garlic, minced
  •  3 Tbsp olive oil
  •  2 Tbsp Dijon mustard
  •  1 2 lb(s) top sirloin grilling steak, about an inch thick
  •  ¼ tsp salt
  •  ½ cup red wine
  •  ½ cup beef stock

Recipe:

1. Preheat oven to 425°F (220°C).

2. Place peppercorns in resealable bag.

3. Using smooth side of mallet or bottom of heavy saucepan, crush peppercorns to size of sesame seeds.

4. In small bowl, combine peppercorns, garlic, 2 tablespoons (25 mL) of the oil and mustard. (Make-ahead: Cover and refrigerate for up to 4 hours.)

5. Trim fat from steak.

6. Spread pepper mixture around edges of steaks; sprinkle with salt.

7. In ovenproof skillet, heat remaining oil over high heat.

8. Sear on both sides until golden brown, about 2 minutes per side.

9. Roast in oven, turning once, for about 15 minutes for medium-rare or until desired doneness.

10. Transfer to cutting board; tent with foil and let stand for 5 minutes before slicing thinly across the grain.

11. In same skillet, bring wine and stock to boil, scraping up any brown bits; boil for 2 minutes.

12. Strain through fine meshed sieve; return sauce to skillet.

13. Add cream; boil for 1 minute.

14. Add any accumulated juices from steak to sauce. Serve with steaks.

  3. Any steak recipe that doesn’t involve cooking over an open flame is Not a recipe I will be trying.
    How I cook good marbled beef:
    Let sit covered until the steaks reach room temperature.
    Create good Hot fire (wood, charcoal, or propane, cooks choice)
    Brush both sides of meat lightly with olive oil to prevent sticking.
    Cook from 3-7 minutes per side (varies with heat and steak thickness) until desired doneness is reached.
    Let rest several (as in 2) minutes before plating.
    Salt Very lightly if desired.
    I prefer to skip the straight salt and instead cover in mushrooms lightly sauteed with salted butter.
    As for doneness I prefer Rare (a warm red-ish to pink center) but when not cooking it myself I normally have to order it Very Rare (cool red center)for it to actually arrive Rare.
    I semi-recently had a meal at the Texas Roadhouse restaurant and it was one of the best steaks I’ve ever had while eating out. The service was top notch, the sides were excellent, and they take great care in cooking your steak to perfection.
    If you have a Texas Roadhouse in your area, I HIGHLY recommend you give them a visit once this quarantine mess passes. Highly Recommend!

  4. Tenth season episode “Maximum Homerdrive” with the steak eating contest is the first thing I think of when I think of steaks and “The Simpsons”. Also, sous vide steak finished with a good sear is simply fantastic and much less hassle and risk of overcooking!
